Grandma Virginia's Graham Cracker Cake

My Grandmother modified this recipe from the newspaper. It's Dad's favorite birthday cake.
Ingredients
- 1/2 cup butter
- 1 cup granulated sugar
- 3 eggs, divided
- 2 1/4 cups graham cracker crumbs
- 1/4 cup cake flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 cup milk
- 1 tsp. vanilla extract
- 1/2 cup chopped pecans
Instructions
- Cream the butter and sugar.
- Add the egg yolks, one at a time.
- In another bowl, add the cracker crumbs, flour, baking powder and salt.
- Alternate adding cracker mixture and milk to butter mixture.
- Finally, mix in nuts and vanilla.
- Beat egg whites stiff, then fold into batter.
- Pour batter into two round layer cake pans.
- Bake for 30 minutes or until toothpick inserted in center comes out clean.
- Assemble and ice with your favorite frosting; we use chocolate buttercream.
